The classic Globe Eggplant, with its deep purple skin and spongy texture, is perfect for hearty dishes like eggplant parmesan or baba ganoush. The slender Japanese Eggplant, with its thinner skin and fewer seeds, offers a sweeter taste ideal for stir-frying or grilling. We also cultivate the small, round Thai Eggplant, which is essential in authentic curries and boasts a slightly bitter flavor that complements spicy dishes beautifully.
